I had so much fun making and baking Christmas cupcakes this year. This was my first experience with fondant—I thought they turned out pretty well!
Operation Christmas Cupcakes. My goal is to bake a lot of Christmas cupcakes this year and give some away as gifts. Who doesn’t want cupcakes for Christmas? These chocolate hazelnut cupcakes were my first endeavor. Thanks to my awesome brother for the photo of the finished product!
I made these cupcakes for a friend over Thanksgiving break. Fabulous recipe. The frosting—peanut butter, butter, and vanilla = my new favorite smell.

here’s my suggestion: make sure the butter is at room temperature when you start—but not too soft. often times if the frosting looks too runny i’ll either add more confectioners’ sugar or i’ll stick the frosting in the fridge for a few minutes. hope that helps!
Happy Autumn! It’s that time of year and I love it! I made these delicious pumpkin muffins the other day—they were absolutely fabulous. For the frosting, the recipe called for orange and black fondant. Fondant isn’t my favorite thing ever, so I improvised and came up with my own frosting. I used 1/2 cup of butter, 2 cups of confectioners’ sugar, and maybe a teaspoon or two of maple flavoring. So delicious if I do say so myself!
